Little bit of this...little bit of that

I love this time of year! Basketball season has started and Hartnell basketball is doing awesome...as of right now they are 4-1 and ranked 9th in the north! :) They played Las Positas last week and won 61-52 with Blake having 22 points and then last Saturday they played Merced and won 60-58 with Blake having 17 points! Tonight they play against Skyline...hope it turns out well!
Now my main reason for this post...baking! I don't normally bake...and I never did when I was growing up, it just wasn't my thing, however I do enjoy eating baked goods. Well I, for some reason, wanted to bake everything pumpkin for the last few days. You name it...pumpkin bread, pumpkin chocolate chip cookies and muffins, pumpkin roll and then I came upon this yummy recipe by Paula Deen from the Food Network. Try these pumpkin bars...they are delish!
Ingredients
Bars:
4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Icing:
8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.
To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

I love Paula Deen! Haha I've always been made fun of because baking has always been my thing lol..I guess when you're not good at sports like myself, you have to find something that you can do that won't injure others haha! I'll have to try this recipe out! I hope your Thanksgiving and Birthday was awesome!
